In place of homefries I smoke tiny potatoes marinated in olive oil and a variety of herbs and spices, could do the same with a fry version though!! Just kidding, I think Carolina style is good but it does not hold a candle to the simplicity of Texas style IMO which pretty much lets the meat talk! Any of these with the above equals bomb- deviled eggs, tater bombs (tiny taters from previous post), tater salad, mac salad... and cole slaw is a must for my wife, not for me at all. I have some loins that I will turn into breakfast sausage later. They will get a pink salt cure after grinding, followed by a cold smoke.
