Baked beans and real grilled homefries are amazing.

Baked beans and pulled pork is awesome. In place of homefries I smoke tiny potatoes marinated in olive oil and a variety of herbs and spices, could do the same with a fry version though!!

Also, we are perfecting our homemade baked bean recipe currently, a little sweet, a little heat!!

Brisket & Mac and Cheese (w/without jalapenos) equals bomb.

Pulled Pork w/ baked beans equals bomb.

Any of these with the above equals bomb- deviled eggs, tater bombs (tiny taters from previous post), tater salad, mac salad...

and cole slaw is a must for my wife, not for me at all.

Pork and chicken? We aren't going to be 100% exclusively beef.

Yeah, I’ll eat chicken. Or any seafood protein if applicable.

Just curious, why no beef or pork?

Dunno, I think it’s a texture thing. Pisses me off but I just can’t eat it.

I’m not a soy boy, haha. At least not by choice.

Have you smoked a grind without casings?

My cousin brought back a bunch of wild boar from a hunt in Arkansas.

I have some loins that I will turn into breakfast sausage later.

They will get a pink salt cure after grinding, followed by a cold smoke.

I have just enough beef tallow to finish this batch
